There are actually several versions of this recipe on Youtube, and you can easily see how to put these together. The trick is to slice apples very thin. Recipe is easy but does take some time. 40 Minutes to thaw frozen Puff Pastry, about 20 minutes of prep and 40-45 minutes of cooking time.
Apple roses are baked in a muffin tin (12) but can easily be halved.
Equipment you will need:
Medium glass bowl
Flour for dusting rolling surface
3-4 Apples (Red Delicious, Gala, Fuji, or Jazz apples all work nicely)
2 Sheets of Puff Pastry, such as Pepperidge Farm brand
6 Teaspoons of apricot preserves (Strawberry, even orange marmalade works well, too.)
4 Tablespoons of water
1 1/2 Cups of water
Juice of 1/2 Lemon
Powdered sugar for garnish
Thaw Puff Pastry according to directions. In a small bowl, mix the preserves with the 4 Tablespoons of water (until smooth) and set aside.
Slice apples from stem to bottom in half. Core each half and cut off stem and bottom ends. Starting at the end you just cut, slice into about 1/16″ pieces, or as thin as possible. Note: You may want to use a mandolin on the smallest setting or a food processor blade to get these very thin slices, depending on your knife skills.
Fill the glass bowl with 1 1/2 cups of water, add the apples and squeeze lemon juice over the apples and stir. Add more water if all apples are not submerged. Microwave apples (uncovered) in the water for 5 minutes. Note: This step makes them tender enough to roll. Drain the apples in a colander.
Place thawed pastry on the floured surface. If you are using Pepperidge Farm brand, it unfolds to 3 pieces each sheet. Cut at the folds, then cut again. You need 12 strips (assuming you have decided to make the entire recipe.) Roll each strip to make slightly thinner. Spread preserves over each strip.
Place 7-9 Apple slices along one half of the pastry strip with the peel at the top and slightly over the edge of the pastry. Sprinkle with sugar and cinnamon. Fold the bottom half of the pastry up over bottom of the apple slices. Starting on the (narrowest) end, begin rolling the apple/pastry from end to end. Place in muffin tin. Continue with each strip until you have completed all 12.
Bake at 375 degrees for 40-45 minutes. Sprinkle with powdered sugar, ummmm… Share the Love!
